Dr Oetker Gelfix Extra 2:1

This wonderful product from Dr Oetker allows you to make extra fruity jams and preserves with half the amount of sugar!

The box contains two sachets of 25 grams each.

Each sachet is sufficient for making 1000 grams of fruit (1 kilo) to 500 grams of sugar.
(Or you can use 750 ml of fruit juice and 400 grams of sugar.)

To make a delicious, reduced sugar, strawberry jam you will need 1 kilo of cleaned ripe strawberries, 500 grams sugar & 1 Gelfix sachet 
(& the juice from half a lemon, optional)

1 Clean & prepare the fruit.  Empty into a large heavy bottomed sauce pan.

2 Mix the sachet of Gelfix into the sugar and empty into the pan.  Add the lemon juice now if using.
Place the pan over a medium heat and stir well, with a wooden spoon, until the fruit & sugar turns liquid.  Now increase the heat.
Continue to stir occasionally to ensure the mixture does not stick on the bottom of the pan.
(I blend the mixture now, with a hand blender, to get rid of any chunks of fruit.  But this is optional.)
Allow the mixture to boil rapidly for a minimum of 3 minutes, over a high heat, while stirring constantly.

3 Pour the jam into prepared glasses (right to the top) and seal the lids on well while the jars are still very hot.  Wiping away any spillage around the neck of the jar with a paper towel.  (Use a tea towel to ensure you can hold the jars).
Allow the pots to stand on their lids for around 5 minutes.  Then allow to cool completely before labeling.

This 1 kilo of fruit / 500 grams of sugar mixture makes approximately 6 small jam pots.
