Natto is simple and easy to make at home using this concentrated bacillus.


 Natto foods, which are from Jomon period (3000 to 4000 years ago),
have a  history around A.D. 710.

30-kg natto can be made from this powder, Natto bacillus 3g.  
 

The protein contained in 100 g of Natto is about 10 g. 
Natto, is zero Cholesterol, though it is a high-protein food.
In other words, Natto would be suitable if you are looking for low-calorie ingredients with high protein.

The ingredients which are not contained in Natto are only vitamins A and C. 
But if spring onion(green onion) containing much vitamin A and C add,
it would become“ the perfect food ”containing all the ingredients good for health.
Therefore, Japanese people put a  spring onion(green onion) on Natto since ancient times.  

 
Natto can be made also from the following grains.
Black soybean, blue soybean, deep red soybean, tea soybean, millet, barley,
chick bean (chick Pea). In these cases, please lengthen fermentation time.

How to make natto 

Work 1: Sorting of the soybean
■Remove an alien substance, a worm-eaten spot bean, an unripe bean, a damaged bean.

Work 2: Wash a soybean
■Remove sand and the dirt of the soybean.
■Wash carefully, so not to damage soybeans when washed or rinsed.

Work 3: Soaking the soybean
■Containers should hold 4 x of the quantity of soybeans used.
■The beans double in size when soaked.(at least)
■Pour water of approximately around 3 times of the quantity of soybean.  
(an example) Put 250 g of soybeans in a container and add 750 ml of water.
■Cover and soak in a warm place, for approximately 18 hours.

Work 4: Boil the soybean(Steam slowly the soybean)
■Move the soaked soybeans to colanders and drain water off .
■Steam slowly, turning the beans at 30 minute intervals, until soft in centre, approx 5 or 6 hours.
■Pressure cooker is faster but beans can easily become too mushy. 
(Please refer to the manual of the pot to use)

Work 5: Sterilising the water
■Please sterilize the container to be used for sterilised water.
(all right just to have warm boiling water as simple pasteurization) 
■Let water boil for around five minutes and cool it.
Sterilise all containers & mixing utensils. 

Work 6: The making of bacteria liquid
■ Using the supplied 0.1gr spoon, (1 heaped spoon.)
Put the Natto starter into the sterilized container,
     add and agitate about 10 ml to 20ml of sterile water, to make bacteria liquid. 

Work 7: Inoculation of a bacillus
■ Prepare the sterilized containers and utensils to agitate, etc.
■ Add the boiling soybeans to the container, add the Natto Starter fungus
 and mix well with sterilised utensils immediately, ensuring the starter is well mixed in.
This must be done while Soybeans are still warm. This is very important. 

Work 8: Put a soybean into a container
■ Prepare the sterilized utensils etc.
■ Put soybeans into a container with the sterilized (spoon)...UTENSIL.
■When you put a soybean into a container,
Please do not pile the soybeans too high (three steps or less).
    If too many Soybeans are piled too high, the beans in the centre may not ferment.This is also important.
■When you put a soybean into a container, please do not use the soybean which fell on the floor etc.
■After having put a soybean in a container,
please cover with sterilized cloth on a container. This is very important.
Vapor of the warmed soybean makes waterdrop on the lid of a container.
If the waterdrop fell to the soybean , a Natto bacillus would be flowed by waterdrop.
By putting cloth, cloth prevents waterdrop falling.

Work 9: Fermentation
■Keep the mix warm ( approximately 30-40 deg Celsius) to ferment.
For example,  Use an Esky, with a large drink bottle, with hot water at correct temperature in it.
Other methods include: in the oven with approx 40Watt or 60 watt lamp on a cord.
Beans must be kept between 37 deg Celsius and 43 Celsius.
Ferment the beans for approximately 22 to 24 hours, maintaining temperature.

Work 10: Maturing
■ In order to stop the fermentation, place the beans in a refrigerater overnight.

Work 11: Completion
■After the aging, it is complete.

Storage : Please store this starter in refrigerator (cool and dark space, with low humidity).
