Keystroke logs files send all the time directly from the observed computer, there is no limit of data storage.
1GB concerns situation when you insert the device and saving data on it.
Then one-time limit of downloading of data is 1GB, but you can always delete and move data from it and the limit is renewable.

How do you set it up for which email to send the logs?
The software manufacturer does not take part in any way in
communications between you and the observed computer and the
software manufacturer is never in possession of any information
saved or retrieved from the computer.

The software makes use of the outgoing mail server (SMTP) of
existing email accounts (either free or commercial email accounts).
For this purpose, you should create an email account or you should
use one that you already have and want to use.
Then you should configure the sending of keystroke log files from
the observed computer with the parameters of this email account.
