For sale is one new, open-stock, second-grade*:  Shun Kaji 3 1/2" Paring Knife, model KDM0001; made in Japan. 

*Note:  This knife is an unmarked factory-second (no 'xxxx' designation).  It has a short, hairline crack at one of the rivets; a fairly common occurrence with the Kaji line.  The defect is wholly aesthetic and the knife is otherwise excellent.  While not suitable to the collector, it remains a good option for the chef who intends to put this fine tool to use.

Product Description:

Shun crafts their Kaji Paring Knives with the exotic SG-2 powdered steel as a cutting core, but then goes a step further by cladding it in a true Damascus pattern cover.  This is incredibly difficult and labor intensive because the Damascus process involves the folding together of two different types of metals; in this case, nickel alloy and high-carbon steel.  So, unlike the other Shun lines, there are actually three types of metal in the blade instead of two.  The Kaji's SG-2 powdered steel is processed using a special method known as hot isostatic press which yields an alloy with a much higher density and grain structure and no imperfections or weak points, permitting an impressive Rockwell hardness of 64.  SG-2 is simply unmatched in performance, edge-retention, and re-sharpening.  Shun Kaji also feature full-tang construction, ebony-black PakkaWood handles, stainless steel bolsters, and stainless steel end-caps embossed with the Shun logo.
