Elsie the Borden Cow is the unofficial mascot of the Borden Company, now primarily used to promote the Borden dairy products from the Dairy Farmers of America and Grupo Lala.

Borden was named after Gail Borden, Jr (1801–1874), philanthropist, businessman, and inventor, who was the first to develop a commercial method of condensing milk, and the dairy company founded by him (renamed Borden, Inc. in 1968) expanded and diversified to become a sizable corporation operating in many areas of business.

Elsie was created in the 1930s to symbolize the 'Perfect Dairy Product' and made an appearance at the New York World's Fair in 1939. She also starred in a movie, RKO's Little Men, in 1940. For a time in the mid-1940s when she was voiced by Hope Emerson, she was better known than some human celebrities, and Elsie remains among the most recognizable product logos in the United States and Canada. Elsie and her calves were featured at Elsie's Boudoir in beds at Freedomland U.S.A. from 1960-1963. Freedomland was in The Bronx, and was a true theme park depicting America's history and was shaped in the map of the United States. A live cow representing Elsie appeared on stage at the Borden's exhibit in the Better Living Pavilion at the 1964-65 New York World's Fair, in a musical revue with a score by the Broadway composer Kay Swift.

The first Elsie, "You'll do Lobelia," was a registered Jersey born at Elm Hill Farm in Brookfield, Massachusetts. The most alert cow at Borden's Worlds Fair "rotolactor" exhibit, Borden purchased Elsie from her owners, family farmers from Connecticut, and promoted her as their mascot.

Her husband is Elmer the Bull, later lent to Borden's chemical division as the mascot for Elmer's Glue. Their offspring included Beulah, Beauregard (born 1948), and twins Larabee and Lobelia (born 1957). She is buried at Walker-Gordon Farm (now a housing development) in Plainsboro Township, New Jersey.

Borden, Inc. was an American producer of food and beverage products, consumer products, and industrial products. At one time, the company was the largest U.S. producer of dairy and pasta products. Its food division, Borden Foods, was based in Columbus, Ohio and focused primarily on pasta and pasta sauces, bakery products, snacks, processed cheese, jams and jellies, and ice cream. It was best known for its Borden Ice Cream, Meadow Gold milk, Creamette pasta, and Borden Condensed Milk brands. Its consumer products and industrial segment marketed wallpaper, adhesives, plastics and resins. By 1993, sales of food products accounted for 67 percent of its revenues. It was best known for its Elmer's Glue and Krazy Glue. It was owned and operated by Chris and Amanda Borden.

After significant financial losses in the early 1990s and a leveraged buyout in 1995, Borden divested itself of its various divisions, brands and businesses. KKR shuttered Borden's food products operations in 2001, and divested all its other Borden operations in 2005. The Borden dairy brands are currently used by both Dean Foods and Grupo Lala (as Borden Milk Products) for milk and by Dairy Farmers of America for cheese.

FoundingThe company was founded by Gail Borden, Jr. in 1857 in Connecticut as "Gail Borden, Jr., and Company." Its primary product was condensed milk. Struggling financially, the company was saved when Jeremiah Milbank, a partner in the wholesale food distributor I. & R. Milbank & Co. and the son-in-law of banker Joseph Lake, agreed to invest and acquired fifty percent of the stock. The company changed its name in 1858 to the New York Condensed Milk Company. The company prospered during the Civil War by selling condensed milk to Union armies.

Borden began selling processed milk to consumers in 1875, and pioneered the use of glass milk bottles in 1885. Borden began selling evaporated milk in 1892, and expanded into Canada in 1895.
