"Boseong" Green Tea

Boseong is located at southern area in Korea, about 400km away from Seoul. The landscape of fields

are wonderful so that CNN introduced Boseong tea field as one of the most beautiful 31 scenes in the world in

Sep., 2013. Boseong has also best condition for green tea cultivation. Boseong is a place where mountains, ocean

and lakes joint together and oceanic and continental climates converge. So Boseong has a wide daily temperature

range, which significantly influences the formation of amino acids in the tea leaves. Boseong's annual average

temperature is 13.4 degree and annual average rainfall reaches 1,400mm. And Misty days happen very often,

89 days in a year. It provides enough water for tea plants to thrive while providing shade against sunlight. Amino

acid theanine is related with delicious tastes of green tea. This gift of natural mist creates the soft and flavor.

Because tea seeds are sowed on mountain slopes, Boseong tea is labor-intensive. But it provides a distinctively

delicious and healthful tea of high quality.

"Sundawon" tea is produced eco-friendly

There are twenty green tea farms just in Boseong area and most of those farms have been certified organic from

USDA(CU 811094), EU organic and JAS. Sundawon farm is one of them. Sundawon farm has history of 50 years

for making only green tea. Every year the national tea contest is held in Boseong and Sundawon won a silver

prize at 39th contest in May, 2013. The farm's all processing is natural. Sundawon use stone ball for grinding

leaves to minimize mechanical processing and keep tastes and nutrition of tea itself. To use stone instead

of steel cut, Sundawon's all process is done naturally. The name "~dawon" means "tea farm" in Korean.

Korean Green Tea

The green tea is cultivated in three countries (Korea, China, Japan), but each country has different taste and

aroma. Koreans have focused on taste, China on aroma, and Japan on color, the difference of them has been

resulted from steaming and roasting. Korean green tea is produced by both steaming and roasting. Leaves are

steamed and then roasted at 80ºC and rubbed in circle in hands until they take curved and round shapes. The

process of both steaming and roasting can make teas taste fresh and savory, and increases the content of amino

acids to give the taste of soft sweetness.
