How To Use Your Stovetop Pizza Oven

How to Use: Assemble your oven as instructed in the manual (about 15 minutes). Place the oven on top of your gas stovetop burner, making sure the opening on the bottom of the oven (which exposes the bottom cordierite stone) is centered above the burner. Turn your burner to high and allow to preheat for 15 minutes with the door shut. Remove the door and place your pizza on the stone using a pizza peel. Replace the door and allow to cook for about 3 minutes. Remove the door and use your peel to extract the pizza and then rotate it 180, then replace the oven and shut the door. Allow to cook another 3 minutes and remove.

Please Note: Recommended for 9500-15000 BTU NG or LPG Indoor gas range burners. Can be used on burners with lower BTU, but preheat time may be longer.

Caution: Oven will become very hot. Use heat safe gloves when handling. Do not leave unattended. Allow to cool before cleaning and storing.

Basic Tips:

--Use 4 ounce dough balls for 12 inch thin crust pizzas.

--Preheat oven at least 10 minutes with door closed.

--Use peel no wider than 12 inch.

--Run burner on high when preheating and cooking.

--Turn pizza 180 degrees halfway through cooking.

Tips for the Avid Stovetop Pizza Oven User:

--Make sure the oven is preheated properly before inserting your first pizza. An oven that hasn’t been preheated properly will not cook your toppings quickly enough. If your burner’s output is 9,500 BTU, preheat for 20 minutes. If your burner’s output is 12,500 BTU, preheat for 15 minutes. If your burner’s output is 15,000 BTU preheat for 10 minutes. Cook times will vary depending on your burner's output.

--Dust the pizza peel with plenty of flour or corn meal to prevent sticking. Don’t let a fresh, uncooked pizza sit on the peel for longer than five minutes, as it will stick. If the pizza sticks on an aluminum peel, leave the peel and pizza in the oven for 1 minute to release the dough. Then pull out the peel. Using a wooden peel may also reduce the chance of sticking.

--Dough is much easier to work with at room temperature.

--If the bottom of the pizza is cooking too fast, an aluminum peel can be used to slow it down by sliding it under the pizza during cooking.

--Check the underside of the pizza 2-3 minutes after it’s in the oven to make sure the stone isn’t getting too hot. If so, turn the temperature down slightly to prevent burning.

--The thicker the crust, the lower you will want to set the oven temperature.

--When sliding in a raw pizza, aim for the center of the stone. It is possible to push the pizza into the backstop, which can cause it to stick, so take care to center your pizza. If you need to move the pizza, wait approximately 30 seconds while the dough sets, then move the pizza to the center.

--Remove oven door as infrequently as possible to retain heat while preheating and cooking.

--Once a pizza is finished cooking, the oven is immediately ready for another one. Your Stovetop Pizza Oven performs best when pizzas are cooked successively. Do not allow the oven to run empty longer than 15 minutes between pizzas as this can allow the stone to overheat.

Care:

The outside of the oven is made of high heat rated porcelain-coated steel. To clean, wipe the outside surfaces with a cloth dampened with water and a mild dish washing detergent and dry immediately. Do not use abrasive scrubbers or the finish may become scratched.

Particles of food can fall off the edges of the pizza stone. Once the oven has cooled, remove the interior components to clear out burnt particles. Clean the body and pizza backstop with mild soap and water. Clean the body and backstop after each use to prevent food build-up.

The stones may also be removed from the oven for cleaning. Run them under hot water while scrubbing with a brush. Do not use soap on the stones as it may leave a soapy aftertaste. The natural properties of the baking stone will cause it to darken and spot with age – do not attempt to remove this discoloration. Air dry the stones completely before storing them back inside the oven. The stones do not have to be cleaned after each use, but we do recommend brushing off any food particles to prevent build up.

PLEASE NOTE: The Stovetop Pizza Oven will reach 600F during cooking. Please keep this in mind when determining whether the Stovetop Pizza Oven is compatible with your stove top. The Stovetop Pizza Oven should fit directly over one of your burners without covering or coming too close to materials that could be damaged by high heat such as plastic knobs or counter tops made of heat-sensitive materials. Built-in ranges featuring knobs on top of the range directly next to burners are not compatible with the Stovetop Pizza Oven. We do not recommend purchasing the Stovetop Pizza Oven if your range has dial knobs near your burners or if your range is directly next to a countertop that can not withstand some heat.
