METHOD:
1.)
Rinse the quinoa well in cold water for about a minute. This removes
the bitter-tasting saponins which are a naturally-occuring coating on
the grains.
2.) Place in a large saucepan and add the 2 cups of water. Set on a high heat and bring to the boil.
3.)
Once boiled, turn down to a very low simmer, add the turmeric and
paprika, a splash of white wine vinegar, plus a generous pinch of salt.
Stir in, then cover the pan and simmer for about 12 minutes.
4.)
After 12 minutes check that the quinoa has absorbed most of the water.
It will have expanded quite a bit and will be looking nice and fluffy,
innit :)
5.) Move a fork
through to loosen everything up and plate a portion or two up, add some
fresh parsley leaves, a sprinkling of dry-toasted sunflower seeds, a
crack of black pepper and you've got one bad-ass side dish on your
hands. Well.....soon to be in your mouth but that's all good! :D
