Product Description:

Shun crafts their Fuji Santoku Knife with the exotic SG-2 powdered steel as a cutting core, but then goes a step further by cladding it in a true Damascus pattern cover.  This is incredibly difficult and labor intensive because the Damascus process involves the folding together of two different types of metals; in this case, nickel alloy and high-carbon steel.  So, unlike the other Shun lines, there are actually three types of metal in the blade instead of two. 
The Fuji's SG-2 powdered steel is processed using a special method known as hot isostatic press which yields an alloy with a much higher density and grain structure and no imperfections or weak points, permitting an impressive Rockwell hardness of 64.  SG-2 is simply unmatched in performance, edge-retention, and re-sharpening.  The Fuji also feature ambidextrous handles made from richly-grained dark tagayasan 'iron sword' wood, a dense wood traditionally used in Japan to make samurai sword handles, and are capped with polished Damascus steel.
