specially for use in lacto fermented preserving in a jar.
This is a fairly new product that was developed to keep the vegetables below the level of the liquid in the jar, which is really about the only cause of possible failure when using lacto fermenting preserving methods.
We have two sizes, clear ones to fit a standard canning jar (2" in diameter weights) or to fit a wide mouth canning jar (2 1/3 " diameter weights). Please note the picture below, with the wide mouth size there is approximately 1/2 " space all around the margin of the weight where it does not cover the food. This is to allow the gas to come to the top and not get stuck under the weight. Also, on some spongy food or food that floats, more than one weight might be needed to keep it submerged. For really stubborn food you can also use these as spacers where the cap is used to pressure the food down using the thickness of two weights.
You get 9-10 weights of the standard size which are about 2 inches in diameter, or 6-7 weights of the wide mouth size which are about 2 1/3 inches in diameter.
They are made of soda glass, one of the most inert substances known, and should not leach any chemicals into your ferments. .
If you do not presently use lacto fermenting canning, you should! This is one of the oldest, easiest, most energy efficient and most healthy ways of preserving your harvest! I recommend 2 books Nourishing Traditions by Sally Fallon and Wild Fermentation by Sandor Katz.
