Sencha is a steamed green tea made from small-leaf Camellia Sinensis.Among the types of green tea prepared by infusion, sencha is distinguished from such specific types as gyokuro in that it is shaded for a shorter time or not at all, or bancha which is the same tea but harvested later in the season. It is the most popular tea in Japan.

The flavour depends upon the season and place where it is produced.

The ideal colour of the sencha beverage is a greenish golden colour. Depending upon the temperature of the water in which it is decocted, the flavour will be different, adding to the appeal of sencha.Green tea, including sencha, contains a moderate amount of caffeine. Depending on the variety and brew, sencha can contain between 12 and 75 milligrams of caffeine, comparable to 80 to 200 milligrams of caffeine in a cup of coffee.

Making tea: Add 1 teaspoon of the tea to 1 cup of water.Sencha teas prefer a lower brewing temperature of around 170°F, if you don't have thermometer, use water that has just barely started to simmer.Brew time: 1-2 minutes.
