Description

Zafaran (imeretinsky saffron) - better known as marigolds (Tagetes) - a plant of the Astrovye family. Golden marigolds, like the children of the Sun, give the inhabitants of the Earth not only their color and aroma, they have an interesting secret purpose: one of the most delicate spices, Imereti saffron, obtained by drying and grinding flower baskets, is “mined” after being cut. Such an unusual name dry flower was in honor of the king of spices - saffron, and the geographical adjective was given to him in Georgia, where marigolds were grown on an industrial scale. Marigolds are from America, where they grow wild from New Mexico and Arizona to Argentina. Imereti saffron has been actively used in cooking in many countries for several centuries. The history of this spice began in Central America, and then it was discovered and began to be used in other countries. Imereti saffron has a honey-bitter taste and a strong spicy-floral aroma with fruit notes in it. Interesting fact: In England, this plant was called "Marigold" - associated with gold. In Russia, they called it “The Marquis” for velvety petals, in Ukraine they call it “Chernobrivtsy”, and in Georgia - “Imeretinsky saffron”. In the middle of the 18th century, Carl Linnaeus invented the Latin name TAGETES for them. It was given in honor of the mythological character, the grandson of the god Jupiter TAGESA (in Roman mythology, the Etruscan god), famous for its beauty and ability to predict the future. Tages discovered the Etrussees treasured secrets of life, taught them to predict fate and find treasures hidden in the earth. The ancient Indians believed that the marigolds have magical powers and that where this flower grows, there will definitely be gold. One of the first Russian agronomists, Andrei Bolotov, who lived in the 18th century, very carefully described the marigolds, which at that time were called “African flowers”. They were one of the first overseas plants brought to our country approximately in the 18th century, and two centuries earlier they came to Europe, where the Spanish conquistadors brought them from America. From the pre-Columbian era in the New World, marigolds were used as seasoning and fragrant medicinal brew. In Mexico and Africa, with the help of marigolds, people protect their homes from annoying flies. From the grass of these plants prepare infusions and decoctions for pest control, and the plant planted in gardens and vegetable gardens protects vegetable and fruit crops from various pests. Zafaran, Imeretinsky saffron The name "Imeretinsky" came from the name of the area in Western Georgia, but the second part of the name - "saffron" - as if they tried to emphasize the similarity of spicery with real crocus saffron. However, the similarity is very relative. Both saffron have coloring properties and a floral scent, but in fact both the scent and the ability to dye in these plants are completely different, and they cannot be interchanged. These are different spices. And calling the marigold saffron, sellers often mislead buyers, because this spice has the right to be called saffron exclusively in the phrase "Imeretinsky saffron." Sometimes it is also called false saffron, but in my opinion, this is unfair to such a beautiful spice, which are marigolds. Useful properties The flowers and leaves of Imeretinsky saffron are rich in essential oils, the components of which are otsimen (50%), citral, linalool, apinene, sabinene, D-pinene, myrcene, limonene, n-cymol, D-terpinene. Imereti saffron is also rich in vitamins - C, A, P, B vitamins, and minerals - phosphorus, sodium, magnesium, calcium, potassium, iron, selenium, zinc, manganese. Mexican Indians considered Tagetes to be a divine flower from pre-Colombian times, endowing it with magical properties. The ancient Maya made from the flowers of marigolds sacred drink "balche", which has a psychotropic effect, causing hallucinations. Modern Mexican shamans still know the secret of using this drink in their rituals. The Aztecs drank marigold tea to treat diarrhea and stomach cramps. With the extract of Lucida, the Aztecs rescued people struck by lightning. Mexican Indians used Tagetes tinctures to enhance lactation, relieve rheumatic pains. Bundles of fresh and dried taghetes are in great demand in the markets of modern Mexico. They are used as a flavoring for dishes from maize, for medicinal purposes, in ritual religious and shamanistic ceremonies. Tagetes tea has a stimulating effect, and gives a successful result as a recognized aphrodisiac. Modern research confirms the healing properties of tetetes: flowers contain carotenoids, in particular, lutein. These substances reduce the risk of developing cataracts, have anti-inflammatory, antifungal effects. Imereti saffron is a very healing plant. Using it in the form of tea, decoctions and tinctures can bring many benefits to your health: • Marigolds are a natural immunomodulator, i.e. help strengthen the immune system. • Regulate the work of the pancreas.
