The inspiration for Amy’s Organic Black Bean Vegetable Soup comes from a lovely restaurant in Puerto Escondido, Mexico that we are delighted to share. Tender black beans, sweet corn, organic carrots and other vegetables provide rich taste and texture while garlic, cilantro and spices give this soup character and depth of flavor. It’s naturally low in fat with 4g per cup and high in plant based protein (6g per cup) and fiber (5g per cup.) We’ve made it easy and convenient to have a delicious bowl of black bean vegetable soup in minutes—just heat and serve! Since 1987, we at Amy’s Kitchen have produced delicious, organic, convenient foods for people who are sometimes too busy to cook.
