The Story Behind the Coffee

“Kopi” is the Indonesian word for coffee and “Luwak” is the local name for the cat-like Civet.

In the forests of Indonesia lives the Luwak or Palm Civet (Paradoxurus Hermaphroditus). Being partial to picking only the most perfect Arabica coffee berries, the Luwak climbs trees and using its ultra-sensitive sense of smell it is able to select only the ripest and sweetest coffee berries and adds them to its diet. As they pass through the digestive system the enzymes which naturally occur in the gut break down the bitter proteins in the bean, and this starts the fermentation process which ultimately gives Kopi Luwak its distinct smooth and syrupy like texture. The undigested coffee berries are sent out as clusters of excrement and these are then collected by farmers before being cleaned, sun dried and prepared for shipment.

Preparation and Storage

On average 1 teaspoon or more according to your taste. Once opened reseal your bag of coffee with the 'ziplock' and store in a cool dry place. Use within 2-3 weeks of opening for ground and 4 weeks for beans.

Coffee experts agree to grind your coffee immediately before brewing for the best possible taste.

The normal ground coffee you buy deteriorates faster than roasted beans because of the greater surface area exposed to oxygen. Our coffee grinders grind the coffee to a uniform size determined by the separation of the two abrasive surfaces between which the coffee is ground. the uniform grind produces a more even extraction when brewed. When roasted the green coffee bean expands to almost double its size, changing in colour and density. As the bean absorbs heat it turns to a light brown and then to a dark oily colour. During roasting oils appear on the surface of the bean. The bean will continue to darken until it is removed from the heat. These techniques determine the particular taste and roast that make up the flavour of the coffee. You can buy and mix your beans to your own taste to produce a terrific cup of coffee. Please do not compare these models to smaller inferior imported types.
