How to use: NS-Mix (Food additives) Lobo brand is a mixture of
salt and sodium nitrite. Help freeze the color of the meat Improve texture and
protect Just in comparison with the meat used, it is 1.5% of the amount of meat
in the recipe. For example, making sausages or bologna, the total weight of 1
kg will use 15 g (3 tsp). NS-Mix. (Food Additive) Lobo brand can be used for
making sausages and a variety of dry sausages. You can make ham, bacon,
sausage, red meats, bologna ham, chicken breast at home. By preparing the brine
water (Strong brine) to inject ham and bacon in the refrigerator for 2-3
nights, preferably fresh and cold meat. While the cooking should be done
quickly, do not wait until the meat is warm. Some ice cubes can be added if the
sausage or bologna mince is too thick. The final temperature for cooking
sausages, ham and bologna is only hot water (70oC). Do not use boiling water as
if boiling. Drying of sausages takes several hours in a household oven using a
very low temperature (40-50oC).
