Jalapeno pepper is a Mexican pepper (also known by the name of cuaresmenho or gordo or huacinango).
Generally
speaking, jalapeno has dimensions between 4 and 7 cm and is eaten
green, still not fully ripe, to limit the spiciness and enhance the
aroma.
The
degree of spiciness of jalapeno is generally between 2500 and 10,000
Scoville Units, with peaks of 50,000 for some specimens: the capsaicin
present in not very high quantities makes it a chili pepper suitable for
everyone, very malleable even in the kitchen.
Jalapeno
can be consumed in various ways: pickled, in brine, fried stuffed with
cheese (typical dish of Tex Mex American restaurants) and, above all,
dried in the sun and smoked with particular wood (hickory or pecan nut,
known to us as walnut American) becoming the famous "Chipotle".
