Curing salts are used in food preservation to prevent or slow spoilage by bacteria or fungus. Generally they are used for pickling meats as part of the process to make sausage or cured meat. 


Please note - This is not a table salt - this is for professional use only. NaNo2 0.6%


You can use as only nitrite salt. And nitrite salt in combination with plain salt. ( not iodized ) 


I use Nitrite salt with plain salt in the preparation. In the ratio of 40% nitrite salt and 60% plain salt (not iodized).


Example: In the manufacture of dried pork neck, I use a salting mixture at the rate of 25g per 1 kg of meat. The mixture consists of 10 grams of nitrite salt and 15 grams of plain salt.
