Do you like very sharp "Three Virtues" knives?  Here are two that were used by the chefs at the Bamboo Garden Restaurant in Asheboro for years. They both have rectangular, straight cutting edges for slicing thin cuts of fish, meat or vegetables. The one with the wood handle is 12 in. long and 3 in. wide, has Chinese characters along the blade, and seems to be a Chinese Clever (needs honing).  The other knife is a one-piece forged steel and nitrum Kyoto knife - 12.5 inches long by 3.5 inches wide (very sharp).  The knives are very worn in with lots of character and some scratches, but they will still give you years of cutting enjoyment.
