The custom of drinking green tea began in China many centuries ago. Its popularity lay in the sociable aspects of tea making and its effects as a powerful medication. The Japanese monk, Eisai stressed the beneficial effects of tea in his book Maintaining Health by Drinking Tea (1211): "Tea is a miraculous medicine for the maintenanace of health. Tea has an extraordinary power to prolong life. Anywhere a person cultivates tea, long life will follow. In ancient and modern times, tea is the elixir that creates the mountain-dwelling immortal".

Studies have shown that green tea and its major component catechin, reduces the growth as well as the actual generation of cancer.

Further research has revealed that the tea restricts the increase of blood cholesterol, helps those with diabetes by reducing blood sugar and kills bacteria. This makes it valuable in counteracting food poisoning and eliminating toxins. Much attention is also being given to its anti-oxidant abilities, and studies show that the catechin in green tea is a far stronger antioxidant than vitamin E.

Green tea has the ability to counteract the effects of rich, greasy foods, functioning as a solvent and breaking down fats and proteins.

How to use: Place a small pinch of tea leaves into a cup or tea pot, then add hot boiling water to infuse for a few minutes. Take your time to drink it. You can use more or less tea leaves depending on how strong you want the tea.
