Guatemalan Antigua Peaberry Gourmet Fresh Roasted Coffee Beans


Most coffees cherries produce two beans per cherry; they grow side by side, resulting in two beans with flat surfaces. Pea-berry are individualist they grow one bean per cherry, many coffee connoisseurs have suggested they are infused with all the flavor intended for both beans. With a full-body taste, a prominent aroma, and similarities to Kenyan coffee, this bean from Tanzania may be small, but it packs a lot of punch. The special peaberry beans are notoriously known for being small fused beans roundly shaped with a cleft in the middle. The Tanzania Peaberry coffee beans roast easily, absorbing all the flavors for optimal flavor quality.

Medina is known for their high quality Guatemalan Antigua Peaberry Washed Coffee Beans from central Antigua. But in this unusual offering, they have produced a Natural process coffee that was very well done and we thought our customers would enjoy trying it, albeit briefly. Finca Medina is a Rainforest Alliance farm in the central coffee belt of Antigua city in Guatemala. Antigua, in addition to being a beautiful and ancient city, surrounded by volcanoes, is something of an Appellation Zone, with just about 50 farms able to be called genuine Guatemala Antigua. The principal varietals or coffee cultivars in this area are classic Bourbon plus derivatives Caturra and Catuai, harvested between January and mid-March. This particular lot has some Marsellesa varietal, a Bourbon and Timor hybrid well suited to the area.

Farm Profile: Finca Medina has been producing coffee since 1842 and today farms about 1000 bags of coffee per year. We visited the farm some years ago and were impressed by a farm wide irrigation system they had installed to remove some of the detrimental variations of weather and, in particular, the off years that are caused by lack of rainfall. The farm ownership has a social and environmental consciousness, among other things providing for their community through school scholarships and materials for children of farm employees as well as donations to a local orphanage which offers care to disabled children.

This plantation is a member of the Rainforest Alliance that awards its seal for thoughtful land use and sustainability. 10% of the farm is dedicated forest, regenerated with native species. An intensive environmental program is being conducted throughout the rest of the farm to identify additional opportunities for environmental care of the land. The farm is fully irrigated. They are a member of APCA, the organization certifying Antigua farm authenticity.

Cup Characteristics: Aromas of rose, plantain, cherry and honey. Flavors of strawberry rhubarb, sweet brown sugar, peach, cranberry juice, honey, hazelnut. Fruit penetration from Natural processing is mild to medium and balanced. This is an easy drinking Natural with lots of sweet juiciness.

Every Morning We Start Roasting At 4:00 A.M.  I lite our Probat roasters for the day to roast only the coffees that have been ordered that same day. Yes, we take our coffee seriously in fact very seriously. Small batch roasting is more expensive because it limits the amount of coffee, we can roast in one day but, this roasting technique ensures that each batch of coffee Beans will be superior in quality and roasted evenly to the desired roast profile, not mass produced. This process draws out the best possible flavor in each batch. Small batch roasting permits a higher quality of standards in coffee throughout the complete process: from choosing the correct charge & drop temperature & then to slowly roasting each small batch to perfection.

 All Our Coffees Are Packaged In 1 Pound Bags That Are Nitrogen Flushed.  Nitrogen is an odorless and tasteless gas that is heavier than oxygen. It is typically used in the food industry because of its ability to reduce the staling process. Since Nitrogen has no smell or taste, it won't compromise the quality of the coffee taste but, will ensure its freshness for a long period of time.
