Jicama (pronounced like "Hick-i-mma"), is an exotic root vegetable that features a crispy texture and is used in cooked or fried dishes like a potato or sliced into salads like a carrot, parsnip or turnip. Freely eat fresh, un-rooted, Jicama raw after peeling the skin off. Jicama originated from Mexico. It is popular in both South American and Asian cuisine. The texture is coarse like a apple, it is sweet like an apple and is less starchy than a potato.

Note: The fruits from the root are the only parts of the plant that are edible. The bean pods that arise above ground are only good for saving the bean-like seeds for replanting. They are not edible.

Jicama, Health Benefits and How to Use:
One Jicama tuber can provide you with over 200% of your daily vitamin C requirements. The vegetable is also high in vitamins and minerals such as Vitamin B, potassium and magnesium. It is also low carb, which makes it a great choice to incorporate into to a low-carb diet.

Use Jicama raw in slaws, garden salads, shrimp salads, taco topping preparations and as a side item with chili and lime seasonings. Fry Jicama slices like french fries or homestyle potatoes and serve for breakfast or lunch. There are many recipes online for using Jicama. Jicama can also be added to healthful smoothies, baked and boiled.

Jicama Care and When to Harvest:
These vine plants grow well in warm climates as, they cannot withstand a frost. They are vining plants, so it is recommended to support the vines in some way by choosing to plant near a fence or by adding a trellis. Space plants 2 ft. apart. Jicama can be grown in containers. Harvest root fruits grown from seed within 6-9 months after sprouting.

Germination Procedure: Soak seeds in water overnight before sowing to soften up the bean-like seeds. Sow seeds 1 inch into soil. Plant in warm soil temperatures of 70% or higher. Ensure soil temperatures stay warm and that the soil remains moist throughout the germination time. Germination time: 14-21 days.
