I’ve sold a lot of Vintage French Copper pans. I love them. I'm always searching for  traditional  Rare ! 3mm gauge Copper. 

FINALLY, the work has paid off and I have gotten lucky by finding this E Dehillerin Paris Vintage 1930 - 1960`s 16 cm sauce pan.
I've paired it with a top quality 2mm Unused Vintage Windsor style saucepan 22cm /17 cm base.
Both stamped with made in France .
" A windsor pan is a pan with a wide rim that tapers downward. It’s purpose is to allow for rapid evaporation of liquid when you are reducing sauces or soup, similar to what a saucier does. "

Why do Chefs use copper pans? 

Longevity (they will outlive the Chef), robustness and heat transfer from the heat source to the contents. Copper conducts heat incredibly well, no cool spots like other materials and allows food such as sauces to cook evenly and avoid steam creation. Steam is the enemy for classic dishes as it takes with its flavour. 

They will heat in seconds not minutes. The heavier the pan, the more robust, the longer the life.

 
They are >2mm & 3mm gauge grade copper beaten on their sides with 3 study copper or iron rivets attaching their traditional iron handles  
Interiors are "tinned "
The 3mm Dehillerin has been used (not much) thus the dark interior the tinning is totally intact.
They are heavy Dehillerin 1.85 kilos . Windsor 1.79 kilos
