TIE GUAN YIN, IRON BUDDHA, FROM ANXI, CHINA OOLONG TEA

The tea is named after the Chinese Goddess of Mercy Guanyin.  Other names include "Ti Kuan Yin", "Iron Buddha" and "Iron Goddess of Mercy". Oolong is a traditional Chinese tea based on Camellia Sinensis plant. Oolong tea combines the properties of green tea and black tea. The degree of oxidation can range from 8 to 85%, depending on the variety and production style.  Most Oolong teas, especially those of fine quality, as Tie Guan Yin involve unique tea plant cultivars that are exclusively used for this particular variety. Tea production in Fujian is concentrated in two regions, historical centers of Oolong tea production: Wuyi Mountains and Anxi County. 

This Tie Guan Yin Oolong, known as Iron Goddess of Mercy, is from Anxi County and is light fermented. It is traditional old style Oolong, easily recognized by light green colour of low roasted leaves. Each leaf is curled to small beads and as all traditionally handmade Oolong tea have a tail. The processing of Tie Guan Yin tea is complex and requires expertise. Even if the tea leaf is of high raw quality and is plucked at the ideal time, if it is not processed correctly, its true character will not be shown. One last step, baking or roasting, is exclusive to Oolong tea and is referred to as the real art in making tea. This is why the method of processing Tie Guan Yin tea was kept a secret. Liquid is yellowish, clear and very transparent with aroma of fresh citrus fruits and flavour remaining young garden`s fruits. Brewing tips:

As it is Oolong tea and have properties both of green tea and black tea we recommend to experience your own method of brewing this tea. Because this particular Oolong is light fermented we suggest to brew it at lower temperature than black tea, but higher than green tea..

Classic: 2 to 3 grams, 200 mills of water at around 90+ C degrees, 3 to 5 mins depend on preferences. After you have finished brewing, take the leaves  out of the cup/teapot if they remain in the water too long, they start releasing tannin. Tannin makes tea taste bitter, inhibits absorption of  magnesium and iron which are necessary for the body to function properly. 

Subsequent: 3 to 5 grams of tea, 80 to 100 mills of water around 90+ C degrees, first brewing up to 30 second and each next around 20 second longer.

All our tea is hand processed at the day of dispatch. All our tea (loose-leaf tea and our teabags) is placed to the metal tin or two, three layers’ pouches and heat sealed at the day of dispatch to ensure freshness and aroma of the tea. We use different pouches to pack different teas as not all teas required same space. For example, Oolong tea in opposite to Pai Mu Tan required less space and we can easily put 200 grams in to big pouch when same pouch will contain no more than 80-100 gram of Pai Mu Tan tea. It is the reason we do not offer some tea such a Pai Mu Tan packed to metal tin when weight is higher than 50g.
