Some post offices isn't working through weekend . Bank Holidays  and lately Royal Mail is striking.. that will take your parcel to arrive later that expected... .. I  purchase postage labels on Internet and keep every proof of posting.. 

As i am one person small shop .. sometimes to pack your order can take longer   ... and I can pack   orders  at any time of day.. even 10pm...
