Habitat: Shiitake mushrooms grow in groups on the decaying wood of deciduous trees, particularly shii, chestnut, oak, maple, beech, sweetgum, poplar, hornbeam, ironwood, mulberry, and chinquapin (Castanopsis spp.). Its natural distribution includes warm and moist climates in southeast Asia.
Plant Description: Shiitake mushroom is a fungus native to Japan, China, and Korea. Although these mushrooms are cultivated worldwide as of 2004, Japan is still the largest producer of shiitake mushrooms, producing 80% of the total supply.
Used in Asian cuisine for over 2,000 years, cultivation of shiitake began almost 700 years ago in Japan. The Japanese consider the shiitake not only a flavorful food but also the elixir of life.
During the Ming Dynasty (1368-1644), the shiitake was reserved only for the emperor and his family and it became known as the emperors food.
The word shiitake comes from shii (a type of chestnut tree) and take (mushroom). Shiitake is an excellent source for amino acids ; vegetable proteins; iron ; thiamine (vitamin B1); riboflavin (vitamin B2); niacin ; and vitamins B6, B12, and D2. Shiitake is known as hsaing ku (fragrant mushroom) in China.
The shiitake has a medium-sized, umbrella-shaped, tan to brown cap. The edges of the cap roll inwards. The underside and stem are white. You will find many variations when you shop for this mushroom
It has been estimated that the origin of shiitake mushrooms can be traced to the cretaceous period, over one hundred million years ago.
It is found growing wild in the mountainous regions of China, Japan, Indonesia, and Taiwan. The scattering of shiitake spores has been traced using typhoon wind patterns as the mushrooms were dispersed from one to the other of these countries.
