As the distilled liquid exits the still, it flows directly into the parrot's beak and then into a collection vessel. Within the parrot, there's an alcometer or proofing hydrometer (not Included) which floats in the liquid. As the alcohol content changes, the hydrometer rises or falls, providing a continuous reading of the proof or ABV of the liquid being produced. This allows distillers to monitor and make adjustments as needed, ensuring the desired alcohol concentration
