About Raw Wildflower Honey (Crystallised)  
The flavour depends on the wildflower blossoms and the whimsy of the bees. Raw Wildflower Honey is a poly-floral honey variety. This means that many different types of flower nectar were collected by bees to create this delightful raw honey. Compared to other honey types, wildflower honey contains a greater number of antioxidants. The darker the honey is, the greater the nutritional content. The more variety of wildflowers pollinated by the bees can also add to the nutritional content and also brings the addition of beneficial compounds from many different plants. Raw Wildflower honey is slightly darker than Acacia honey but maintains a similar texture and viscosity.
Wildflower honey is thick and rich, complex in flavour and a wee bit sweeter than Acacia honey. It is a robust and perfect "all around" honey. We recommend it drizzled in yoghurt or on buttermilk biscuits. Eat wildflower honey raw or baked into cookies and sweet-breads. Raw Wildflower honey tastes as if it were spun directly from the comb because it was! It just doesn't get any fresher.

Real Raw Honey Crystallises. And That's A Good Thing!
Many assume that crystallised honey is adulterated or ‘spoiled.’ This is not so. Real, raw honey crystallises. The crystallisation process is natural and spontaneous. Pure, raw and unheated honey has a natural tendency to crystallize over time with no effect on the honey other than colour and texture. What's more, the crystallisation of honey actually preserves the flavour and quality characteristics of your honey. Many honey users prefer it in this state as it is easier to spread on bread or toast. Indeed, some raw honey recipes can be easier to make with partially or fully-crystallised honey — and, the taste is richer. Honey also vary in the size of the crystals formed. Some form fine crystals and other large, gritty ones. The more rapid honey crystallises, the finer the texture will be. And crystallised honey tends to set a lighter/paler colour than when liquid. This is due to the fact that glucose sugar tends to separate out in dehydrating crystals form, and that glucose crystals are naturally pure white. Darker honey retains a brownish appearance. The crystallisation of honey is a gift of nature.

Raw Honey vs. Regular (Store-Bought) Honey

Pasteurisation
The main difference between regular and Raw Honey is that regular honey is pasteurized and filtered.
Pasteurisation is the process where honey is heated at high temperature to kill any yeast that may be present in order to prevent fermentation. It’s also done to keep the honey from becoming granulated, making it look better to consumers. Commercial honey is smooth and uniform in colour. Raw honey is milky in colour and may have granules that can be melted in warm water if desired. It can be assumed that any honey not labelled unpasteurized has gone through the pasteurization process.

Other Differences
Other Raw honey contains all of the nutrients necessary for good health: vitamins A, C, D, E and high concentrations of the B-complex vitamins including thiamine, riboflavin, niacin, pantothenic acid. Raw honey also has beneficial enzymes and other nutrients. High heat kills most of the enzymes and some vitamins, thus pasteurized honey doesn’t have as many health benefits as raw honey. One of the enzymes raw honey contains is amylase, which aids in digestion by helping predigest bread and other starchy foods, according to Benefits of Honey. Raw honey also has better taste, aroma and a darker colour than its pasteurized counterpart.

I aim to despatch all orders within 1 working day of cleared funds. If purchased and paid at the weekend or in public holiday it will be posted the next working day. Orders will be despatched via Royal Mail.
Estimated delivery times: 1-3 working days in the UK, 3-7 working days Europe, 7-10 working days Rest of the World.
Working days are normal weekdays. Dispatch times don't include Saturdays, Sundays and major holidays. Transit times don't include major holidays and Sundays but may include Saturdays, depending on the delivery service provider. Unused Items: Please make sure that your item is unopened, unused and undamaged (unless it is faulty), plus all packaging and/or leaflets and instructions must be intact.
Your request will be handled and processed as soon as possible and you will be notified when I receive the returned parcel.
I highly recommend obtaining a free proof of postage when you send your return just in case it is lost in transit or there is an issue. Don't forget to hold onto this until I've processed your refund or replacement.
