Heirloom Ethiopian Kale

This leafy green originated in Ethiopia, in East Africa. It is known by various names, including Ethiopian kale, Ethiopian mustard, Abyssinian mustard, African kale, and Highland kale. This plant is often considered a mustard green, and its leaves are mild in flavor compared to kale and mustard. This type of cruciferous green leafy vegetable prefers a mild climate but has good resistance to cold and drought. While full growth happens at about two months, the baby greens can be harvested at about 25 to 30 days, and are a nice, sweet addition to salads or greens recipes.
