This is a restored Chicago Cutlery 61S boning knife with a 6-inch straight blade made of walnut. The handle is solid, held together with 3 brass rivets. It is suitable for cutting vegetables and meat.


I sharpened the blade and then honed it with a leather strop.


The handle was sanded and treated with BooS Block Board Cream.


The handle was white. It had lost all it's natural color because of being put in the dishwasher. It was difficult to sand just enough without loosing the letters and numbers.
