What it is


   Chios Mastic is a natural, aromatic resin in teardrop shape produced from the mastic tree (pistacia lentiscus var. chia) natural resin only growing in the southern part of Chios Island. The settlements of the mastic producing region are called "mastic villages". The uniqueness of the product is attributed not only to a deep-rooted tradition in cultivation, but also to certain soil and weather conditions that favor mastic tree’s flourishing.

    Mastic in fact is first mentioned by Herodotus, who refers to its usage in embalming. In Roman times, women used it as a breath freshener and a teeth whitener. Christopher Columbus himself was astonished by the properties of mastic when he visited the island. He actually believed that mastic could provide the cure against cholera! Nowadays, mastic has been recognised internationally as a Product of Protected Designation of Origin. This distincion recognizes the name of a specific region or country where a specific agricultural product originates exclusively due to the geographical environment.    

     Little has changed in the mastic production process from the ancient times until today. The exploitation of the trees for the extraction mastic (their resin), starts from the fifth year of their life. The period of their cultivation is from July until the beginning of October. The first step in the process is the leveling and cleaning of the perimeter around the trunk of the tree, where the mastic falls. The next step is the spread of white soil (calcium carbonate powder) on this area in order to facilitate gathering without altering its chemical composition. Then the "kentos" starts, in other words the carving of scars (incisions) on the skin of the tree. The incisions are made systematically: 5-10 on each tree, every 4-5 days. The resin flows progressively from the incisions, falling on the ground where it solidifies gradually, providing either large chunks ("pites") or smaller ones ("psilo"). These chunks, once collected, are cleaned by the mastic producers and their families through a tedious process that typically lasts throughout the winter.
 
Applications

    Mastic appears to have myriad applications ranging from the medicinal to the functional ones, including use as a stabilizer in paints and making varnishes, especially for musical instruments. Besides being used in toothpaste, chewing gum and confectionery, mastic is an ingredient in the making of liqueurs. A Greek grape spirit, masticha, is flavoured with the resin. Mastic is also found in recipes for breads and pastries, ice creams, sweet puddings, almond cakes and the traditional Greek spoon sweets (glyká tou koutalioú). Stimulant and diuretic, mastic was widely used medicinally in the past and chewed to neutralise foul breath. It is thought to have anti-microbial properties. Finally, cosmetic skin care methods comprise applying to the skin ointments containing gum mastic, which are believed to provide anti-aging benefits and an overall healthy and youthful appearance of the skin.


              How To Use

Chewing Chios Mastiha is a truly amazing experience. Select a few medium pieces of the resin, or combine a small piece with a large one.  The larger pieces tend to be softer than the small ones, so it is recommended the use of a mixture of small and medium pieces.  Before chewing, let the pieces moisten and get warmer in your mouth. Mastiha may taste a bit bitter at first, but that taste soon fades revealing the unique taste of mastiha Chios.  After chewing some time Mastiha becomes a white silky color.  The resin keeps its hard texture indefinitely and this is precisely why it is recommended for gum health and amazingly clean and healthy teeth.  Keep chewing the gum and you will gain all the therapeutic benefits.
