 What is Gaiwan

A gaiwan was first used in the Ming Dynasty in China as a way to brew tea.

It is made up of three parts: a saucer, a bowl and a lid and can be made of a variety of materials such as porcelain, clay or glass or any material that may be glazed.

The only material that is not suitable for a gaiwan is metal as this absorbs heat and would cause the tea to lose its warmth too rapidly.

Gaiwans are usually quite small with a volume of only about 100-150ml and when it comes to making tea, there is a very particular way in how to use a gaiwan.

How to Hold a Gaiwan

A gaiwan is quite small and can fit comfortably into the palm of one hand. Place a thumb onto the dimple of the lid handle and then put your fingers under the saucer.

The saucer acts as a shield to stop your fingers from getting burnt. You can tilt the lid with your thumb to let the aromas escape and, when infused, the tea without allowing any of the tea leaves out at the same time.

By holding the gaiwan securely this way, you can either sip it straight from the cup or decant the tea into another vessel from which you can drink.
