Sodium diacetate is a free-flowing  source of both acetic acid and sodium acetate.
It is the molecular combination of neutral sodium acetate which holds the acetic acid
inside the crystal lattice.
The acid is firmly held, as evidenced by the negligible vinegar odour of the product
Sodium diacetate is supplied in a convenient granular form that readily dissolves in water,
thereby releasing the two constituents.

Applications:
Sodium diacetate is an effective antimicrobial agent for inhibiting the growth of many 
types of yeast, mould and bacteria .
Acetic acid also helps to maintain the preferred acidity of a food product.
In terms of sensory perception, sodium diacetate imparts a savoury flavour 
to foods while adding the desired vinegar aroma.

The main applications are in baking ,meat products, cheeses  and snack foods.
It is the choice ingredient for adding the salt+vinegar flavour to chips or popcorn.

a 1% solution of sodium diacetate is mildly acidic : PH 4.65
