IRIS:

The Iris of Tuscany is collected on the third summer after its first bloom. Its rhizomes are dried and aged until they start releasing a distinct, sweet, delicate scent. This is when the rhizomes are ground so as to produce one of the most sought-after aromatic concentrates.
