SHOGUN - CENTURIES OF TRADITION AND PERFECTION

The Shogun in Japan was a warlord – a supreme leader of the Samurai – symbolising strength, beauty, pursuit of perfection, ingenuity, endurance, attention to detail and most importantly of all – honour. All of these qualities are embodied in our range of Shogun knives. They are constructed using superior materials by masters of their craft and are characterised not only by their obvious beauty but are extremely hard, have excellent edge retention, high wear and corrosion resistance, and are comparatively easy to sharpen. Every knife is handcrafted by master artisans creating a unique one of a kind work of art, not mass produced!

Shogun Aogami 195mm Japanese Damascus Kiritsuke Bunka Chef Knife Nashiji San-Mai

This is truly one of the most beautiful knives in our collection and it is totally handmade and finished in Seki, Japan. The highly polished mirror finish, with traditional hand engraved logo and unique western royal blue handle, makes this knife breathtakingly striking but also completely functional. The exquisite Nashiji finish is truly unique. The Japanese term “nashiji” (English: pear skin pattern) refers to the result of a technique that appears to leave the surface finish of a blade looking unfinished and rustic.

The core of the knife is precisely forged of one of Japan's, and the world's, best high carbon steels, Aogami Blue Steel No.2. With a 61-62 HRC Rockwell hardness, it ensures extraordinary performance and edge retention. The core is sandwiched on either side with SUS-410 Stainless Steel in San-Mai or 3-Layer style to protect the core and produces the beautiful Nashiji pattern. This is as much art as it is a precision tool.

Aogami Blue Steel No.2

Blue No.2 steel is made by Hitachi and is also called Aogami No.2 and sometimes called Blue Paper No. 2 since the steel is wrapped in blue paper when it's sent to blacksmiths. This steel is highly sought after and made from Japanese pure sand irons at their famous Yasugi plant in Shimane Prefecture. It has 1.10 ~1.20 high carbon with 0.20 ~0.50 Chromium and 1.00 ~1.50 Tungsten at Rockwell Rc.61~62, and it outperforms Shirogami ( White Steel) with better edge retention and ability to take a more acute edge.

Please Note: Due to its high carbon content Aogami Blue No. 2 is not completely rust resistant. Particular care is required to prevent discoloration or rust from occurring particularly when used on highly acidic fruits like lemons. The edge can develop a patina that many chefs actually love as it adds to the character of the knife. Please wash, wipe and dry it up well after use. The use of Camellia Oil and a wooden Saya cover is also recommended.

A Kiritsuke knife (or the similar Bunka knife) is a hybrid design combining features of other familiar Japanese knives including to some extent Gyutos, Santokus, Usubas and Yanagibas. Gyutos are mostly meat knives, Santokus great all-purpose knives for slicing, chopping and dicing, whilst Usubas are dedicated vegetable knives and Yanagibas are used to slice raw fish for sushi. As a consequence, the Kiritsuke is intended as a general-purpose knife designed for all your daily kitchen tasks including cutting, slicing, mincing and dicing of fruit, vegetables and meat. This double bevel Kiritsuke was designed for western users who appreciate the striking aesthetics of the profile but need the added versatility of a double bevel grind. The Kiritsuke’s unique profile makes the knife very nimble but also delicate. The flat profile lends itself well to chopping and push cutting, whilst pointed tip is especially useful for detailed work, adding yet another dimension to this most versatile knife. Designed for professionals who include chefs, culinary experts and food caterers as well as enthusiastic home cooks.

Features:

  • Extremely hard core: Aogami Blue No.2 HRC: 61-62 resulting in high wear resistance, incredible sharpness, durability and edge retention.
  • Blade Construction: San-Mai 3 Layer with stunning Nashiji pattern. The core is painstakingly sandwiched between layers of premium high-carbon stainless steel, resulting in exceptional strength, durability and stain resistance. Perfectly balanced and precisely tapered.
  • Edge: Double-sided 15° degree angle per side ensures maximum sharpness and safety, effortless slicing of meat, fish – sushi, vegetables, fruit and more
  • Hand-engraved Shogun Logo: A labour of love painstakingly completed by an old master utilising tools used the same way for centuries. This is truly something unique.
  • Durable Pakkawood* Western-style Ergonomic Handle: Super strong with full tang, triple riveted and bolster.

* Colour can vary due to natural materials.

Specifications:

  • Length Blade: 195 mm | 7.7 in
  • Overall length with handle: 320 mm
  • Blade Depth: 49 mm
  • Blade Width: 2 mm
  • Net Weight: 200 g

CORRECT USE AND CARE

Suitability of Product. We assume that the purchaser is familiar with the product ordered. Using Japanese kitchen knives guarantees exceptional cutting pleasure. They are a joy to use. The high hardness of the blade allows for thin, precise sharpening making for an insanely sharp edge which will last a long time with normal use. These properties also increase the risk of damage when not using the knife properly. Don’t worry, maintaining a Japanese knife is easy, and kind of fun. As with any high performance tool, it requires some simple maintenance, common sense and TLC to ensure your knife is always in tip top condition and free of damage:

  • To avoid accidental injury and blade damage, treat knives with respect and always take care when handling these knives.
  • Sharpen only using a Whetstone and / or leather strop. Do not use a pull through sharpener, or sharpening / honing steel.
  • Do not use your knife for dense work such as cartilage, bone, nuts and frozen foods.
  • Always clean your knife after use should only be rinsed, not soaked, in warm soapy water and immediately wiped dry with a soft, clean cloth. No knife is completely stainless due to the high carbon content. Whilst the risk of any type of corrosion is extremely low, a good routine will help avoid any discoloration, spotting or corrosion. Japanese chefs often use a drop of Camellia oil to add an extra layer of protection.
  • Never place your fine Japanese knife into the dishwasher on any setting. You will damage your exquisite blade, your handle or both.
  • Keep your knife in a knife block, on magnetic strip or in a wooden knife sheath or Saya cover to protect the blade and prevent damage to the cutting edge by other utensils.
  • Cutting on a soft, non-abrasive surface such as timber or plastic cutting board will help prevent premature dulling of the blade. Metal, bamboo or glass surfaces not recommended.
  • Never use your knife as a lever for opening cans or bottles and never try to flex or bend your knife as this can cause chipping or cracking in the blade, the edge or the Damascus cladding.

Warranty and Return Information

We guarantee any knife we sell to be free from defect in material, construction or workmanship for a period of 12 months under normal use and following proper care instructions. This excludes damage caused by misuse or accident. No dropping, cutting bones, pits or cutting on improper surfaces. Chips in the knife blade, broken knife tips, discolorations from food and rust spots are not covered. This warranty extends only to the product's original purchaser. Please take care of your new knife and it will reward you with years of faithful service.

All of these factors may shorten the life of the tool but are not the result of defective manufacturing.

We do not provide a warranty for consumable products including accessories or consumable wear and tear parts, such as, but not restricted to: Drill Bits, Driver Bits, All Tool Storage (unless specified), Globes,
Collets, Grinder Discs, Saw Blades, Other Blades, Hole saws, Tape Measures, Earplugs, Charger Fans, Router Bits, Brushes, Triggers, Bearings, Seals, Driver Blades, Etc.

Knipex, Wiha and Wera specifically exclude replaceable blades, insert bits, tweezers and ceramic screwdrivers from any warranty claims. These products are either consumable or wear easily and not covered for breakage.
