Pearl sugar will not melt in the oven.  The natural, pure white color comes from the sugar beets from which nearly all French sugars are made (no animal products are used in processing beet sugar, unlike some cane sugar products -- perfect for decorating vegan pastries) and provides a beautiful decorative contrast to golden brown baked pastries, and adds a crunchy sweetness that many yeast dough, choux pastry, and puff pastry recipes call for (and which ordinary sanding sugars can overwhelm).  Indispensable for decorating things like Kanelbullar (Swedish cinnamon buns) and Belgian waffles.  Beet sugar is often described as having a more "earthy" taste.

As shown in the photos, one level tablespoon is about 14g, which means there are more than 35 tablespoons of pearls in one 500g pouch. These pearls are #10 caliber -- about 2-3mm size.  Most baked items will need only 1-2 grams of pearls . . . 500g will easily decorate several dozen large cinnamon buns.
