(About the blade)

W type: No side processing
No hollow processing, flat shape. This is a knife for soft cutting boards (wood and plastic). The blade is not as good as the T type. The W type is recommended for western style knife because it is a little heavier than the T type.
T type: with dimple on the side of the blade
There is an indentation on the side of the blade. Since air enters the hollows, resistance on the cutting surface is reduced, and the fillet is easily separated from the blade, resulting in a lighter cutting edge. Knife for soft cutting boards (wood and plastic). This type is popular for its design and functionality.
G type: with dimple on the side and unevenness on the cutting edge.
This is a unique type of knife with an uneven cutting edge, developed for use with hard cutting boards (stainless steel cutting boards). This type of knife is recommended for slicers because it is effective for pushing and pulling cuts, while the W type and T type are generally used for other knives.
(About the handle part)

M type: Stainless steel handle
The one-piece handle is superior in terms of hygiene (with a flange). The handle is designed to balance the weight of the blade when gripped.
K Type: Laminated reinforced wood handle with flange
The flange increases the strength of the base of the handle and makes it sturdier and less likely to accumulate dirt. The handle is designed to balance the weight of the blade when gripped.
SO type: Laminated reinforced wood handle without flange
The blade is the same as the M and K types. When caring for the blade, it must be thoroughly cleaned so as not to leave any dirt at the base of the blade.

Japanese kitchen knives are highly regarded around the world for their beauty and functionality. The reasons for this are as follows
Traditional manufacturing method: Japanese kitchen knives are made using a traditional manufacturing method inherited from ancient sword-making techniques. This manufacturing process involves working wood and metal, forging and polishing to increase the strength and durability of the knife. This process is deeply rooted in Japanese culture and art, which emphasizes not only beauty and elegance, but also safety and reliability.
High-quality materials: Japanese knives are made of high-quality materials such as iron and copper. These materials are resistant to hardness and rust, and have excellent sharpness and durability.
Unique design and functionality: Japanese kitchen knives have their own unique design and functionality. Since ancient times, a variety of cooking methods have developed in Japan, and knives suited to each of them were necessary. For this reason, Japanese people have placed great importance on making kitchen knives their own. For example, "sharpness," "weight," "shape," "handle," "blade angle," and "cutting edge" vary greatly among individuals. In addition, there is a wide variety of "tachi," "kotou," "naitou," "suita," "horizontal," "diagonal," "diagonal up," "diagonal down," "diagonal front," "diagonal back," "diagonal left," "diagonal right," and so on.
Beauty and elegance: Japanese knives also possess beauty and elegance. Japanese people have a high sense of beauty and artistic sensibility. Therefore, Japanese kitchen knives look beautiful in "edge", "handle", "hue", "pattern", "luster", and "reflection".
