TANZA Dried Herring Fish Known in Philippines as TUYO (literally means DRY). The process of salting and drying preserves the fish and can store for some time. (If refrigerated will last longer) This is done to a number of kinds of fish so you can have different variants of tuyo. Tuyo has been touted as a poor man’s kind of dish as can be procured quite cheaply (and as it is “preserved” can be stored cheaply too!). However, this connotation has been expunged over the years since people of different social status learned to love and enjoy it. This can be justified by the different recipes involving tuyo; these ranges from fried tuyo to gourmet pasta with tuyo. TANZA is a barangay of the Philippine municipality Estancia in the province Iloilo in Western Visayas which is part of the Visayas group of islands.
