Sorrel (Rumex acetosa)
- Sorrel is a leafy green herb in the Polygonaceae family, which includes buckwheat and rhubarb.
- Tender, spade-shaped leaves grow to about 8 inches long from a center rosette and have a pleasantly tart, lemony flavor.
- Harvest the short, young leaves for use as a fresh garnish on spring dishes, or as a tangy addition to a cold, refreshing salad!
- The longer, older leaves have a more intense flavor and hold up better in cooking, so use them to flavor everything from soups and sauces to fish and meats, or sauté them as you would spinach.
- Grows as an annual in zones 3 to 7, or as a perennial in zones 4 to 9.
- 40 days to harvest for young leaves, 60 days for mature leaves.
