This model is of Professional use, made of Yasuki Blue Steel(Aogami)#1.
Aoko(Blue Steel) is said that by containing rare earth elements, such as Chrome, etc., its blade would be less chipped , maintaining sharp cutting quality for a long time,compared with Shiroko(White Steel).Professional Japanese Chefs love this blade material.
