Yoshihiro Professional Quality Knives Made in Japan

Yoshihiro has been producing knives in much the same way for over a century in Sakai Japan. The skills the craftsmen use have actually been around much longer than that. The origins of the techniques used to make Yoshihiro knives began in the 14th century, when swordsmiths used techniques of handling iron, fire and water to create the Katana of the Samurai. Every knife from Yoshihiro is handcrafted by master artisans creating a unique one of a kind work of art, not mass produced! There is not another duplicate anywhere in the world.

The Yoshihiro Kiritsuke Bunka Gyuto GINSAN Yasuki Silver 3 Japanese Damascus Chef Knife is a stunningly beautiful knife and it is VERY sharp straight out of the box! It is constructed with a core of GINSAN (Yasuki Silver #3) - one of the greatest Japanese Stainless Steels – squeezed into stainless cladding in a process known as known as the "Warikomi method". The new material is now forged into one piece creating a highly durable kitchen knife which has been expertly tempered to create the proper tensile strength. Only a skilled craftsman can perform the “Warikomi Process”.

The exquisite Nashiji finish is truly unique. The Japanese term “nashiji” (English: pear skin pattern) refers to the result of a technique that appears to leave the surface finish of a blade looking unfinished and rustic. Supplied with a traditional Wa or octagonal wooden handle made of exquisite Walnut with bolster.

GINSAN (Yasuki Silver #3 Stainless Steel)

Ginsan (Gin3 or Silver #3) is a stainless carbon steel, with 14% added Chromium. Retaining the character of Japanese carbon steel, Ginsan will not rust or corrode like full carbon steel. It combines ease of sharpening with carbon steel character, but being stainless makes a great choice for those who wish to have a Japanese carbon steel knife that is easy to maintain.

About Kiritsuke Bunka Gyuto/Gyutou/Chef’s Knives

The lightweight, double bevel Kiritsuke Bunka Gyuto Chef Knife is considered a hybrid (of Gyuto and Kiritsuke) and is a very versatile knife that can be used to perform many of the tasks normally done with a Gyuto. It excels at precision work like cutting fish, meat (except for bone and cartilage) mincing, dicing and the fine slicing of both vegetables and light proteins. Like most Gyutos, there is enough belly in the blade to support either ‘rock chopping’ and ‘push/pull cutting’. The pointed tip, characteristic of a Kiritsuke, is especially useful for detailed or fine work, adding yet another dimension to this most versatile knife.

Why Japanese Knives

Japan is a land of traditions and a rich cultural heritage. Japanese knives bring a special sense of handmade craftsmanship to any kitchen. Japanese kitchen knives have a rich history stemming from centuries of crafting samurai swords. Japanese steel is forged by hand and folded many times to create a blade that is both strong and durable, perfect qualities for the home kitchen.

Characteristics of Japanese Knives

Japanese kitchen knives tend to be thinner, sharper and harder than Western European counterparts. European chef’s knives are multipurpose masterpieces, and culinary workhorses. They’re used for everything from the tough work of hacking up a chicken to more delicate tasks such as mincing herbs, and everything in between. On the other hand, Japanese chef’s knives are more delicate, somewhat counter intuitively due to the hardness of the steel, and they have more specialized applications and cut with amazing ease and precision. Yoshihiro has a reputation for creating knives that deliver the right balance of hardness, edge retention, toughness and stain resistance.

Dos and Don'ts

Do use Japanese Knives for their intended purpose.  DO NOT use them for dense work such as cartilage, bone, nutshells and frozen foods. There is a delicate balance between hardness and durability. Your typical German knife has a hardness rating of HRC 52-HRC 56 whereas your typical Japanese knife has a hardness ranging from HRC 58-65. The harder the steel and the better the quality steel, the longer the edge stays sharp. Japanese knives, on average, have steel that's harder than Western ones, which makes for knives that tend to be more brittle but can also, if you're careful with them, hold their edge longer.

Do regularly sharpen your Japanese knife using a Whetstone and / or leather strop. DO NOT use a pull through sharpener, or sharpening / honing steel. Because of the hardness of the steel used, Japanese knives require a sharpening regime somewhat different from their Western counterparts. To prevent chipping or removing too much material, care needs be taken when sharpening. Using a Japanese made whetstone or waterstone is the best method. Using a sharpening steel can damage your blade and change the body style of your knife.

Do clean and oil your knife after use. DO NOT leave wet or contaminated with residues.  Stainless does not mean that the knife cannot corrode. The stainless-ness of knives can vary, but all steel can rust or discolour if misused or if improperly cared for. On some stainless knives with lower amounts of carbon, water spotting can occur on the blade. This is normal and not a sign of a defect. Fine Japanese knives should only be rinsed, not soaked, in warm soapy water and immediately wiped dry with a soft, clean cloth. After the knife is clean, run hot water over the blade to heat the blade, then wipe dry with a soft, clean cloth. Japanese chefs apply a small drop of Camellia oil, carefully over the blade's cutting edge to maintain it. Never place your fine Japanese knife into the dishwasher on any setting. You will damage your exquisite blade, your handle or both. Hand wash and store immediately to ensure many years of service from your knife.

Do use a proper cutting surface. DO NOT use on metal or glass surfaces. The best cutting boards for use with these knives are end-grain wood boards. Bamboo boards and poly boards can be excessively hard on the edge.

Do treat your Japanese Knife with respect. DO NOT use it as a lever for opening cans or bottles and never try to flex or bend your knife. This can cause chipping or cracking of the blade. Store knives in the original box, a wooden sheath or on a knife magnet or knife block. Don't put a plastic or leather sheath on the blade as it will rust if any moisture is left on the knife. A little respect goes a long way and will protect your Japanese Knife investment for a long time to come.

Warranty and Return Information

Each knife is checked prior to shipping and paper cut tested to ensure your complete satisfaction. Many of these knives are handmade and each one unique. We guarantee you will receive your new knife in excellent working order. Should there be a problem with the knife on arrival please contact us and keep all the original packaging. We can authorise the return and /or remedy the situation ASAP. The knife must be unused exactly as you received it. Any return must be authorised. We guarantee any knife we sell to be free from defect in material, construction or workmanship for a period of 12 months under normal use and following proper care instructions. This excludes damage caused by misuse or accident. Chips in the knife blades, broken knife tips, discolorations from food and rust spots are not covered. Knife chips and broken knife tips can often be repaired by re-sharpening. This service should be available in your local area. This warranty extends only to the product's original purchaser. It is up to you to care for your new Japanese Knife. If you own knives of this hardness and thin performance edge there are precautions to follow as outlined in this listing. No dropping, cutting bones, pits or cutting on improper surfaces. Doing so will void this warranty. Please take care of your new knife and it will reward you with years of faithful service.

Warranty Exclusions and Limitations
This warranty is limited to defects in manufacture and material ultimately leading to premature failure. The warranty will not cover products that have failed due to normal wear and tear, where repairs or alterations have been attempted by others, damage due to misuse, accidental damage, improper maintenance or external influences such as water or fire. All of these factors may shorten the life of the tool but are not the result of defective manufacturing.

We do not provide a warranty for consumable products including accessories or consumable wear and tear parts, such as, but not restricted to: Drill Bits, Driver Bits, All Tool Storage (unless specified), Globes,
Collets, Grinder Discs, Saw Blades, Other Blades, Hole saws, Tape Measures, Earplugs, Charger Fans, Router Bits, Brushes, Triggers, Bearings, Seals, Driver Blades, Etc.

Knipex, Wiha and Wera specifically exclude replaceable blades, insert bits, tweezers and ceramic screwdrivers from any warranty claims. These products are either consumable or wear easily and not covered for breakage.
