The Red Cat
The Red Cat was an unpretentious neighborhood restaurant in Chelsea that became a destination, and Ina Garten was its biggest fan and regular customer.  Her favorite dish there: the Baked Fontina.
Jimmy Bradley opened The Red Cat in 1999 with the restaurateur Danny Abrams and it slowly drew a citywide following for its low-key charm, casual yet professional. In a New York Times review in 2005, Frank Bruni called it “a place with sophisticated food but not a whiff of arrogance about it,” and praised the way it “simmers attractively without sizzling flamboyantly.”
The name was meant to short-circuit any preconceptions. “I thought the name sounded whimsical and friendly, and it didn’t tell you anything about the restaurant.”  The Red Cat changed little in nearly 20 years, but its Chelsea neighborhood did.  “It’s difficult for small businesses in New York now,” Mr. Bradley said. “My staff can’t afford to live nearby like me; they get home at 2 am and have to be back at work at 9.”   The Red Cat closed in December 2018 after nearly 20 years in business.

The Red Cat Cookbook
Now you can enjoy the charm and the food of The Red Cat -- including Ina’s favorite, the Baked Fontina -- in your own kitchen with Bradley’s straightforward, thoroughly satisfying, and fun-to-read first cookbook.  In Bradley’s cuisine, the Italian-American classics of his childhood meet sensible New England accents and the creative energy of Manhattan in dishes like a pristine sauté of zucchini and toasted almonds topped with salty Pecorino Romano cheese; a surprising—and surprisingly delicious—peach and pancetta risotto; or a lusty prime New York shell steak with Yukon Gold potatoes, fennel, aïoli, and Cabernet. The techniques are basic, not fussy; the ingredients easy-to-find, not esoteric;the flavors bold, not flighty.
