姜糖系潮汕特产，相传已有200多年的历史。姜糖的特点是味甜，略带姜味，绵软滋润，香味浓郁，原料配方：上等红糖28.5公斤、优质熟油4.5公斤、鲜姜1公斤、上等糯米11公斤、上等芝麻2公斤、制作方法：1.制姜汁：将鲜姜洗净，用搅肉机搅碎，加少量水拌匀，挤出姜汁待用。2.制糕粉：按配料将糯米用50～60℃温水淘洗4～5分钟，捞起摊在簸箕里滤干水分，次日早晨用河沙(用菜油制过的河砂)炒制，要大火炒制，不能炒黄。然后用电磨磨成细粉(又称雄粉)。再摊在地上露2～3天后，以手捏粉子成团，不散垮即可。3.熬制红糖：将红糖放入锅内，加适量的水熬化，过滤沉淀，除去杂质，再放入锅内加姜汁和糕粉(要少量地逐渐加入，以免成团)继续熬制。温度掌握在80～90℃，火色不宜大。边熬边搅拌，使糖与糕粉、姜汁渐渐成浓糊状态时加入优质熟油，继续煮开，然后加芝麻和香料拌匀即可。4.成型：将熬好的姜糖糊舀到案台上摊开，冷却后用木棒擀薄，开条切成厚3厘米、宽8厘米的长条形，即为成品。质量标准：规格：长方条形，大小均匀。色泽：深褐色。组织：绵软滋润，细腻化渣。口味：味甜，微带姜味，清香爽口。
