Flambadou (pronounced flahm-buh-doe)!!!
A flambadous a metal cone on a long or short handle (depending on the model*) that sitsin the hot coals. Once the cone is red, you simply drop tallow or beef fat init and wait for it to ignite. Once the fat ignites, you pour the melting,flaming fat directly onto your food to baste and sear it. It is a form ofcooking that dates back to the Middle Ages and became very popular in Frenchcuisine a few years ago. You can use it to sear meat, on a roasting pan or onthe barbecue charcoal grill.

Place the end of the cone of the torch not the coals so that it is in the hottest part. important to make it glow red.
Once the cone glows, you are ready to cook on the fire Remove the flambadou
from the heat and drop your protein fat or tallow into the large opening of the cone and wait for it to ignite.
