At Enzo Creek Nature Sanctuary, there are hundreds of apple trees which were planted over time, spanning decades.  As homesteads vanished and land parcels were split and divided, what was left behind is a potpourri of different apple varieties scattered about the property.  Some have perished from neglect, while others have survived and given rise to offspring in a less orderly fashion than one might think of in a typical apple orchard.  Over the years, the number of apples produced as forage for wildlife has dwindled, in part due to the change in climate, but also due to the battle between the varroa mite and the honey bee.  This is, arguably, the battle at the forefront of the decline of the honey bee we hear about in the news.

We decided to help the Italian honey bee (Apis mellifera) perpetuate by creating the best possible environment for them to survive and overcome the challenges they face from Varroa destructor.  Although the bees pollinate apple trees in the early spring, it is really the wildflower abundance that is responsible for a large portion of the local honey flow. There are acres upon acres of wildflowers at Enzo Creek in the spring which decorate the landscape from which the bees sip their nectar.

Raw honey is exactly what you would expect; it has not been processed with heat that many believe removes the wholesome goodness found in honey. No additives or other ingredients have been used. This honey is made in accordance with the Michigan Cottage Law food act. This honey is made in a home kitchen that has not been inspected by the Michigan Department of Agriculture. Funds from the sale of honey is reinvested in habitat improvement for the rest of the wildlife species which are found at Enzo Creek.
