Description: Nigella is back in her kitchen at a time when the nights are drawing in and most of us are up for a bit of extended kitchen work. As always Nigella’s mantra is that cooking should never be stressful and if you follow her advice it will be nothing but truly rewarding fun. In these three programmes Nigella lays out her philosophy for not only coping with but actively enjoying Christmas entertaining.
PART ONE
At this time of the year, the heady aroma of rich spices, citrus fruits and alcohol fills the house. Baking, mulling and larder-filling are at the heart of this episode. Nigella cooks her last-minute Christmas cake, proving that you don't have to plan your Christmas at least six months in advance. Retro Gravlax is given a Nigella revamp and cider gets the mulled treatment. Recipes in this segment include:
■ Aromatic Spiced Ham
■ Chocolate Fruit Coke
■ Christmas Chutney
■ Christmas Tree Decorations
■ Gravlax
■ Mulled Cider
PART TWO
Dealing with large numbers of perpetually hungry people, is a Christmas challenge that Nigella is happy to meet. Entertaining in the run-up to Christmas can be anything from a coping with large groups of unannounced visitors to the pre-planned dinner parties that seem to crop up with undiminished enthusiasm in the weeks leading up to Christmas. Although the very idea of canapés seem to resonate 1970s they are always consumed with gratitude and there are some simple guides to getting them right. Salty combinations of prosciutto ham, creamy goats' cheese and figgy wraps are quick and simple to assemble, as are Nigella's sweet and sticky ribs and irresistible crabcakes. Saving the day is Nigella's hangover cure, a Cuban chorizo and black bean soup. Recipes in this segment include:
■ Chocolate-Peanut-Butter-Cups
■ Christmas In A Glass
■ Crabcakes
■ Cuban Cure Black Bean Soup
■ Prosciutto Ham Bundles
■ Party Poussins
■ Quickly Scaled Mont Blanc

PART THREE
Nigella has maintained a long affection for Roast Turkey and in her mind there is no alternative to Christmas lunch. Super-spiced and juicy, Roast Turkey is at the centre of this episode. Serve it with pancetta and chestnut sprouts, gingerbread stuffing, roast potatoes and maple syrup parsnips. Recipes in this segment include:
■ Spiced & Super-Juicy Roost Turkey
■ Allspice Gravy

■ Brussels Sprouts With Chestnuts,
■ Pancetta & Parsley
