Tuna fillets (species: Bonito) deliciously prepared, preserved in olive oil with red pepper from the Azores and lightly seasoned with salt.


Tuna caught in the Atlantic waters with a hook and line, using a traditional and centuries-old fishing technique known as "salto e vara"*. Afterwards, it is cooked in brine, following the tradition of the old canners on the island of São Jorge. As a result, a tuna with incomparable flavor and texture.

The rating “Dolphin Safe” and “Friend of the sea”
As an ecological enhancement and recognition, tuna fishing in the Azores, known as “Salto e Vara”, has been certified since 1998 by the non-governmental organization Earth Island Institute as being “Dolphin Safe”, due to its low predator characteristics, and since 2001 as “Friend of the sea”, being the first tuna fishery in the world to be awarded this type of certification.

Since it is an artisanal method, “Salto e Vara” fishing requires all the experience of fishermen on the island of São Jorge.

They start by detecting the presence of tuna through binoculars. There, they approach, turn off the engines and turn on the showers which, simulating the escape of the small fish that the tuna feed on, hide the fishermen from their field of vision.

Then, they throw the bait overboard in order to attract the shoal and start fishing activities. It is an example that allows fishermen to catch only the necessary fish without endangering other species or smaller fish.

Contrary to what happens in trawl fishing practiced by large commercial fleets, the centuries-old “Salto e Vara” fishing gear practiced by tuna boats in the Region are considered environmentally friendly, as they allow the fisherman to select the fish and do not present bycatch.
