The Minosharp SH220 was designed in Japan for the specific purpose of
sharpening Global knives. The twin sharpening wheels are made from the
same material as a traditional whetstones and the angled, V shaped
groves in the wheels mimic the action of a whetstone when a blunt knife
is drawn across them. To get the best performance from your Minosharp
sharpener you should first wet the wheels with tap water. The head of
the sharpener will hold a small volume of water to continually wet the
wheels. The white wheel is made of a coarse material and should be used
to reshape the edge of a very blunt knife while the pink wheel is much
smoother and will apply a fine cutting edge to your Global knife. Simply
insert your knife into either slot one or two and draw it forth and
back six to eight times to sharpen your knife. Heavy downwards pressure
isn't required; the push pull motion of the knife across the wheel does
all the work and will bring your blunt Global knives back to life very
quickly and easily. Replacement wheels are available should yours
eventually become worn or broken.
