Perpetual Spinach Swiss Chard (Beta vulgaris cicla) is not actually a spinach, but in appearance and taste is a great substitute for it, especially for those who have long hot summers not so friendly to spinach. The benefit of being a Swiss Chard is unlike spinach, it will produce up to 9 months well into the fall. This biennial heirloom is much slower to bolt than spinach.
