Hailing from the Azores, Sao Jorge, a tangy raw cow’s milk cheese, is named for an island in the archipelago, where dairying and cheese making flourish thanks to a mild, damp climate and fertile volcanic soil. The history of cheese goes back to when settlers from mainland Portugal colonized the islands, bringing along livestock and cheese making knowledge. Though fresh cheese styles are part of Azores cheese making, aged cheeses like Sao Jorge continue to be the most consumed.


Cured semi-hard paste cheese, with yellowish color, with small irregular eyes disseminated in the mass of firm consistency, with the cylindrical shape of rounded edges.


It is a product with a bouquet aroma and flavor soft and clean, obtained from cow's milk, salt and rennet, with a minimum cure time of 2 months.
