The Big Jim pepper is a hybrid cultivar of New Mexican chilies and a Peruvian pepper developed by Dr. Roy Nakayama at New Mexico State University in 1975 in cooperation with Jim Lytle. It is the world record holder for the largest chile pepper, with individual fruits regularly exceeding 14 inches in length. The peppers are mild when still green but become spicier as they ripen to red. They are usually used to produce green chile, and most peppers are very mild (500 SHU), but occasionally a medium pepper (3,000 SHU) will show up in the mix.

The Big Jim pepper is a mild Capsicum annuum cultivar popular in New Mexico cuisine. It has a Scoville rating of mild and is usually picked while green. The fruits of Big Jim peppers are large and thick-walled, often over a foot in length, and are almost exclusively used to produce roasted green chile.
